The colors caught my eyes and I must confess, it looked like a bowl of happiness. I saved it right away and couldn’t wait to give it a try. But as always, I had to add a little “Joy magic” to make it feel more homely and tailored to my family’s taste. So I threw in some fresh fruits we already had, added crunchy cashew nuts for texture, and finished it off with a drizzle of sweet and tangy homemade dressing.
My husband, who usually raises an eyebrow at anything that looks remotely “too healthy,” took a bite and went for seconds. My girls, loved how colorful it looked and kept calling it “the rainbow salad.” That day, I knew we had a new favorite on our hands.

As with every other salad recipe I share here, the preparation process is super simple and easy to achieve. If you want a particular member of this salad to be more pronounced, you can go ahead and add more of it. There are no rules to making the Fruity crunch kale salad.
Step 1: Prep All Your Ingredients
Start by washing all your fruits and veggies thoroughly.

Chop the kale, cucumber, tomatoes, strawberries, apple, and onions into bite-sized pieces.

Slice the green and red grapes in half.

Peel your orange and gently separate the segments (“the fingers,” as my girls call them!).

Set aside the cashew nuts for a final crunch.
